Creamy potato soup with saltine crackers

Ingredients

2 medium potatoes, scrubbed and chopped

,

2 tablespoons chopped onion

,

1 tablespoon olive oil

,

1 teaspoon salt

⅛ teaspoon cayenne pepper

,

1 teaspoon chopped parsley

,

2 cups low-sodium chicken broth

,

Lactaid 2% Reduced Fat Milk Front of Package

LACTAID® Reduced Fat 2% Lactose-Free Milk


Directions

1.

In a medium saucepan, cover potatoes with water and boil until they are tender. Drain water and add back to saucepan. Set aside.

2.

In a small frying pan, sauté onion in olive oil for 2 minutes.

3.

Add onions, seasonings, chicken broth and LACTAID® Fat-Free Lactose-Free Milk to drained potatoes. Simmer slowly for about 6 minutes, stirring occasionally.
